Blend together the butter and sugars until fluffy and well mixed. Beat in egg and vanilla.
Mix the flours and baking soda in a separate bowl. Add the flour mixture to the butter mixture until smooth and well blended. Stir in chocolate chips and nuts (if using).
Chill dough for at least 1 hour in the refrigerator. Form dough balls by the teaspoon and drop onto pre-greased cookie sheets. Press down slightly on each dough ball. These should be spaced about 2-inches apart.
Bake about 8-10 minutes or until golden brown on the edges. Remove from oven and allow to cool for 2 minutes on the cookie sheet before transferring to a cooling rack.
